Gomantak is Goan. The blend widely used in Goa, and along with basic ingredients either tamarind, or lime is used to get authenticity. Since the state is located in a tropical climate, usage of strong spices is apparant. The cuisine is largely sea food based and similar to Saraswat cuisine. All three types of chilies Byadgi, Sankeshwari and Kashmiri is used.
