Ingredients:
1) 4-5 brinjals
2) 4 tbsp oil
3) 1 tsp cumin seeds
4) 1 tsp mustard seeds
5) Curry leaves
6) 1 medium onion , finely chopped
7) 1 tablespoon MAHA SOLAPUR masala
8) Salt as required
9) ¼ tsp ginger-garlic-green chilli paste
10) ½ tbsp jaggery
11) 1 tsp Kashmiri red chilli powder
12) ½ tsp asafoetida and turmeric powder
Process:
1) Wash the brinjals, slit them, keeping the end intact. Soak them in salt water and keep aside.
2) In a plate, add chopped onion, crushed peanuts, red chilli powder, MAHA SOLAPUR masala, ginger garlic chilli paste, jaggery and salt to taste and mix it well.
3) Fill this stuffing in brinjal. Make a gravy with ginger garlic paste.
4) Add brinjals in it. Cook it well. Garnish with coriander and serve
