Solapuri Bharli Vangi –
Ingredients-
- 4-5 brinjals
- 4 tbsp oil
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- Curry leaves
- 1 medium onion , finely chopped
- 1 tablespoon MAHA SOLAPUR masala
- Salt as required
- ¼ tsp ginger-garlic-green chilli paste
- ½ tbsp jaggery
- 1 tsp Kashmiri red chilli powder
- ½ tsp asafoetida and turmeric powder
Process-
- Wash the brinjals, slit them, keeping the end intact. Soak them in salt water and keep aside.
- In a plate, add chopped onion, crushed peanuts, red chilli powder, MAHA SOLAPUR masala, ginger garlic chilli paste, jaggery and salt to taste and mix it well.
